Erythritol, Inulin (indigestible chicory root fibre), stevia extract blend. All ingredients are zero nett calorie.
Use as 1 for 1 replacement for sugar. To caramelize mix ½ cup with 1 Tablespoon of water in a small saucepan on medium heat – do not use higher temperature as the mixture will burn. Stir continuously whilst heating until fully dissolved. Keep stirring intermittently while simmering until the liquid turns golden brown. For sticky chewy caramel remove from the stove at this point. Simmer for 5 more mins on low if you want the caramel to harden on cooling. Hardening may take several hours to occur (unlike sugar caramel which hardens instantly) but will yield a hard, crunchy clear caramel.
